Sweet Potato Flutes
A little bit of typical Canarian food… Very easy and very tasty.
Truchas De Batata
Ingredients:
1 kg sweet potato
1 kg flour
200 gr lard
Oil for frying
200 gr butter
250 gr ground almonds
1 lemon (juice and rind)
glass of Anis
pinch of cinnamon powder
400 gr sugar
icing sugar to decorate
pinch of salt
Method:
For the dough: Put the flour in a large bowl or on the kitchen work top, make a hole in the middle and add the lard, the butter, salt and glass of anis. Mix it well, kneading in the same direction. You gradually add cold water from the fridge, together with the juice of the lemon until you have a dough consistency. Leave it to settle for 20 minutes. Then roll it out into a thin layer and cut out circles with pastry cutter or glass.
For the filling: Boil the sweet potato in water and salt until they are tender. Then mash and mix in the ground almonds, grated lemon peel, sugar, a drizzle of anis and a little of cinnamon to taste. Leave to settle for 15-20 minutes.
Put a little of each filling in the pastry circles, fold over with the help of a fork to close them once filled.
Fry in hot oil, drain on kitchen paper and sprinkle with a little icing sugar.
