Sour Cherry Liqueur

Very popular Canarian liqueur – Licor De Guindilla or Sour Cherry Liqueur.

Sour cherry is the genuine liqueur of La Villa de San Bartolome de Tirajana, a famous alcoholic drink that is made from a bright red fruit known as “guindilla” or sour cherry.

Ingredients:

6 kg of ripe sour cherries
10 litres of rum (40 proof)
3 litres of water
5 kg of sugar
1/2 stick of cinnamon

Method:

Wash the sour cherries and take the stalks off. Put them in a glass jar which has previously been filled with rum. Dilute the sugar with cool water and add the cinnamon. Finally put the sugar water into the glass jar and leave for one year…

That means, that you are going to wait a one year before you taste this wonderful liqueur…  but you know that old saying: All good things are worth waiting for…
