Sauerkraut Salad
I chose this recipe, because it seems it’s easy and quick (what I always prefer, as you know
). I haven’t tried it yet, so it’s your risk :) When I make it, I will update this post with my impression.
I found this recipe on www.sauerkraut.com (they also have http://www.sauerkrautrecipes.com/) I could not imagine that this kind of web site or domain name exist :) But, it’s very good one and it’s useful, trust me.
Ingredients:
1 16 oz. can sauerkraut
¼ cup finely chopped celery
¼ cup chopped onion
¼ cup shredded carrot
¾ cup sugar
¼ cup vinegar
Direction:
Drain and snip sauerkraut, reserving liquid. Rinse and drain sauerkraut well.
Combine sauerkraut, celery, onion, and carrots.
In saucepan combine reserved liquid, sugar, and vinegar; bring to a boil, stirring constantly. Remove from heat, pour over vegetable mixture.
Toss coating evenly, cover and place in the refrigerator for several hour or overnight.

My mother during the winter makes more simple Sauerkraut salad. It goes like this: sauerkraut, oil and over that grounded sweet red pepper spice. That’s it.
