Creamy Chicken Penne

pasta-chickenToday I reviewed my “Sailing Cookbook” and I found this recipe. Delicious creamy penne pasta with chicken, cheese and broccoli. Easy and quick to prepare (about 25 minutes and your dinner is on the table!). I love these kinds of recipes :)  

You need:

- 500 g Penne pasta
- About 300 g fresh or frozen small broccoli florets
- 200 g (2 dl) half-and-half
- 100 g Cream cheese
- 1 teaspoon Oregano, 1 teaspoon Rosemary leaves (finely crushed), 1 teaspoon Thyme leaves
- ½ teaspoon Garlic powder (or fresh)
- ¼ teaspoon Sea salt
- About 300 g chopped cooked chicken breast
- 2 tablespoons grated Parmesan cheese

Directions:
1. Cook pasta according to instruction from the package. Add broccoli during the last 3 minutes of cooking. Drain well.

2. Meanwhile, bring half-and-half to simmer in small saucepan on medium heat. Reduce heat to medium-low. Add cream cheese, oregano, rosemary, thyme, garlic powder and sea salt; whisk until cheese is melted and sauce is well blended. Add chicken and simmer about a minute more.

3. Put pasta and broccoli in serving bowl. Pour sauce over pasta mixture. Mix gently. Sprinkle with Parmesan cheese and serve immediately.
