Crackers with apple-mayonnaise filling
I am in cooking mood…
Ingredients:
400 g flour
2 tsp baking powder
1.5 tsp salt
1 egg
125 g butter, room temperature
80 g feta cheese
100 ml milk
+ 50 g ground walnuts
For the filling (enough for half of crackers amount):
100 g mayonnaise
2 middle sized apples
1-2 tsp grated horseradish
some finely chopped parsley
some ground walnuts
a few drops of ketchup
Directions:
1. Whisk flour with baking powder and salt in a baking bowl.
2. Add egg, softened butter, crushed feta and milk. Start kneading the dough with a wooden spoon, then continue by hands until it forms a nice non-sticky ball. Optionally, add 50 g of ground walnuts into half of the batter, to get two types of crackers.
3. Twitch small peaces of the dough and roll balls between your hands, flatten them a little. Place about 8 peaces at the electric grill, and bake for a few minutes, closed, pushing upper half of grill to get crackers flatten even more. You should get about 50 crackers, 4-5 cm in diameter.
4. For the filling – peel and dice the apples, add mayonnaise and horseradish. Fill the crackers, and then sprinkle with some ground walnuts and chopped parsley. Add a drop of ketchup at the top. This should be enough for about 20 crackers.
